Truffle Hunting and Tasting


A qualified truffle hunter will help you discover the secrets of truffle hunting, joining, depending on the season, the search for the various species of this precious fruit of the earth.

 

 

 

 

Truffle hunting: € 100,00
Each extra person: € 80,00

The fee is individual and it includes:

- A tour of the woods in the company of an expert truffle hunter, from 1 up to 4 hours.
- The company of a dog trained in the search for black truffle
- Theory and practice of truffle species recognition

Maximum participants number: 5
Young people under 18: € 50,00
Free for children under 10.

Truffle and Wine tasting: € 50,00

Enjoy the truffles harvested during the hunt in the woods accompanied by Musella 3 wines
The fee is individual.

 On request and depending on the season, the activities, including white truffle hunting, might also be carried out outside the Musella farm.

Recipes

Musella offers some simple, traditional and fancy recipes, where wine always takes part as a protagonist or as an humble ingredient.


 
Garganelli, Olive Paté and Gorgonzola

4 person recipe

400 g Garganelli (short egg pasta)
150 g Gorgonzola and Mascarpone Cake
70 g black olive patè
2 chopped nuts
Extra virgin olive oil
Black pepper

Melt the mascarpone and gorgonzola cake at a low temperature in a saucepan (cut into small pieces). Blend gently in order to create a creamy sauce and add the olive paté. Cook the pasta in a big pot of salty water and take it out “al dente”.
Pour the pasta into a pan and gently mix it with the sauce. Serve at a hot temperature and add thinly chopped nuts and some black pepper

 


 


Valpolicella Octopus

4 person recipe

4 person recipe
2 medium octopuses
1 Valpolicella glass
2 spoons of olive oil
1 leave bay pepper

Clean the octopuses and put them whole in the pot with all the ingredients. Boil and leave cooking for an hour.
Drain it off and serve it luke warm.


 


Risotto Amarone

4 person recipe

400 g Rice (vialone nano)
2 Amarone glasses
2 shallots
6 spoons of olive oil
1 liter stock soup
50 g Taleggio cheese diced
20 g butter
Salt and pepper
An handful of chopped parsley

Put the shallot in the olive oil and gently brown it, add the rice and stir it until it toasts. Pour out the wine, keep mixing, and add slowly the stock soup until the rice is cooked. Take away the pot from the fire when the rice is still soft and add with salt and pepper. Add the butter and Parmesan cheese and dust with parsley.
Serve very hot.


 


Recioto’s pears

4 person recipe

4 person recipe:
4 Pears Kaiser
4 Spoons of sugar
200 cl of Recioto
1 clove
1 piece of cinnamon
1 skin of lemon

Peel the pears, cut them in half and take away the core. Brown the sugar and caramel the half pears turning gently for some minutes. Pour over the Recioto with all the spices and add a little water until the pears will be covered. Cook without the lid on a medium fire consuming half of the liquid. Cut the pears in many slices, pour the sauce on top and add some custard cream.




Amarones’s fillet

4 person recipe

4 person recipe:
600 g clean fillet (steak)
2 Amarone glasses
1 glass of olive oil
pepper (pink and black)
2 little branches of rosemary
4/5 leaves of sage thyme, marjoram and bay
1 heel stock

Mix the olive oil and the Amarone with a fork and pour it on the fillet. Add all the ingredients (except the beef stock), cover with a film and leave in the fridge in maceration for 3 -4 hours. Take away the fillet from the sauce, strain the spices from the olive oil and Amarone and put them in a large pot adding the beef stock. Cook for some minutes, then put the entire fillet in the pot and cook with a high fire without lid, turn often, for about 15 minutes. Take away just the fillet from the pot to cut it, then put again the fillet’s slices in the sauce on the fire for the last fast cooking. Serve immediately.


 


Recioto’s crushed-ice drink

4 person recipe

80 g sugar
40 g orange juice
1 spoon of lime juice
4 half slices of lime
6 mint leaves and some others tufts of mint
400 ml Recioto

Put in the freezer 4 cups. Combine sugar, orange juice and lime, mint and 60 grams of water in a saucepan over medium heat. Stir until dissolved sugar, bring to boil; lower the heat and leave for 2-3 minutes. Strain the syrup, let cool and add the Recioto. Pour into a suitable container, place in the freezer for 3/4 hour and stir occasionally with a whisk. Transfer the frozen granita in the cups with a metal spoon. Garnish with tufts of mint and half lime slices. Serve immediately.
